Ingredients
- 400 g skinless chicken breast, trimmed
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp sea salt
- ½ tsp black pepper
- 2 tbsp harissa paste
- 2 tbsp extra-virgin olive oil, divided
- 200 g dried bulgur wheat
- 400 ml low-sodium vegetable broth
- 150 g canned chickpeas, drained and rinsed
- 1 small red onion, finely diced
- 1 red capsicum, sliced into thin strips
- 1 handful fresh flat-leaf parsley, chopped
- 1 tbsp lemon juice
- ½ tsp sumac (optional, for garnish)
Method
- Trim the chicken and pat dry; rub with smoked paprika, cumin, salt and pepper, then coat with 1 tbsp olive oil and the harissa paste, ensuring an even layer for flavour penetration.
- Heat a non-stick skillet over medium-high heat and sear the chicken for 5-6 minutes per side until golden and cooked through (internal temperature 75 °C), then set aside to rest before slicing.
- Rinse the bulgur wheat under cold water, then place it in a saucepan with the vegetable broth; bring to a gentle boil, cover, and simmer for 12-15 minutes until the grains are tender and the liquid is absorbed.
- While the bulgur cooks, heat the remaining 1 tbsp olive oil in a second pan over medium heat; add the diced red onion and capsicum, sauté for 3-4 minutes until softened but still crisp.
- Stir the chickpeas into the vegetable mixture and warm for another 2 minutes, allowing the flavours to meld; finish with lemon juice and half the chopped parsley.
- To assemble, divide the cooked bulgur among four bowls, top each with sliced harissa-marinated chicken, the chickpea-vegetable mix, and a sprinkle of remaining parsley and sumac for a pop of colour.
- Serve immediately while warm, or let the bowls cool before covering for later consumption.
Tips
- For extra protein, add a tablespoon of toasted hemp seeds on each serving.
- If you prefer a milder heat, reduce the harissa to 1 tbsp and add a pinch of sweet paprika.
- Bulgur can be prepared in advance and stored refrigerated; re-heat with a splash of broth to restore fluffiness.
Storage
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently in the microwave or a skillet with a splash of water to prevent drying. The components also freeze well for up to 1 month; thaw overnight in the fridge before reheating.
