High-Protein Tofu & Spinach Scramble
A spiced tofu scramble with spinach and turmeric — a high-protein, plant-based breakfast ready in 15 minutes.
Ingredients
- 280g firm tofu (drained and pressed)
- 100g baby spinach
- 1 small onion (diced)
- 1 garlic clove (minced)
- 1/2 tsp turmeric powder
- 1/2 tsp ground cumin
- Pinch of black salt (kala namak, optional)
- 1 tbsp olive oil
- 1 small tomato (diced)
- Salt and pepper to taste
- Fresh coriander for garnishing
Method
- Heat the olive oil in a non-stick pan over medium heat. Add the onion and cook for 2 minutes.
- Add the garlic and cook for another minute.
- Crumble the tofu into the pan with your hands, breaking it into scrambled egg-sized pieces.
- Add the turmeric, cumin and black salt. Stir well to coat the tofu evenly.
- Add the diced tomato and cook for 3 minutes, stirring occasionally.
- Add the spinach and stir until wilted, about 2 minutes.
- Season with salt and pepper, garnish with coriander and serve with wholemeal toast or chapati.
