High-Protein Tofu & Spinach Scramble

A spiced tofu scramble with spinach and turmeric — a high-protein, plant-based breakfast ready in 15 minutes.

Ingredients

  • 280g firm tofu (drained and pressed)
  • 100g baby spinach
  • 1 small onion (diced)
  • 1 garlic clove (minced)
  • 1/2 tsp turmeric powder
  • 1/2 tsp ground cumin
  • Pinch of black salt (kala namak, optional)
  • 1 tbsp olive oil
  • 1 small tomato (diced)
  • Salt and pepper to taste
  • Fresh coriander for garnishing

Method

  1. Heat the olive oil in a non-stick pan over medium heat. Add the onion and cook for 2 minutes.
  2. Add the garlic and cook for another minute.
  3. Crumble the tofu into the pan with your hands, breaking it into scrambled egg-sized pieces.
  4. Add the turmeric, cumin and black salt. Stir well to coat the tofu evenly.
  5. Add the diced tomato and cook for 3 minutes, stirring occasionally.
  6. Add the spinach and stir until wilted, about 2 minutes.
  7. Season with salt and pepper, garnish with coriander and serve with wholemeal toast or chapati.
