Ingredients

  • 400 g lean turkey mince (≈93 % lean)
  • 12 large butter lettuce leaves
  • 1 medium carrot, peeled and grated (≈70 g)
  • 100 g red cabbage, thinly shredded
  • ½ red bell pepper, finely sliced
  • 2 spring onions, thinly sliced (green tops only)
  • 1 tsp fresh ginger, grated
  • 1 clove garlic, minced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp toasted sesame oil
  • 1 tsp honey (optional)
  • ¼ tsp chili flakes
  • 1 tsp toasted sesame seeds
  • 1 tsp lime juice
  • ¼ tsp freshly ground black pepper

Method

  1. Heat a non-stick skillet over medium heat and add the turkey mince, breaking it up with a wooden spoon; cook for 4–5 minutes until it loses its pink colour.
  2. Stir in the grated ginger and minced garlic, cooking for another minute to release aromatics, then add the soy sauce, rice vinegar, sesame oil, honey (if using), chili flakes and black pepper; simmer for 2 minutes to let the flavours meld.
  3. While the turkey finishes, place the butter lettuce leaves on a serving platter and keep them crisp-handed by covering with a damp kitchen towel.
  4. In a large bowl combine the grated carrot, shredded red cabbage, sliced bell pepper, and spring-onion greens; drizzle with lime juice and a pinch of salt, then toss gently to coat the fibres evenly.
  5. Divide the cooked turkey mixture evenly among the lettuce leaves, spooning about 2 Tbsp per cup, then top each with a generous spoonful of the Asian slaw.
  6. Finish each cup with a sprinkle of toasted sesame seeds for a nutty crunch and serve immediately while the turkey is still warm.

Tips

  • For extra protein, stir a tablespoon of hemp seeds into the slaw just before serving.
  • If you prefer a spicier bite, increase the chili flakes or add a dash of sriracha to the turkey sauce.
  • Use a mandoline to shave the carrot and cabbage thinly; this gives a tender texture that stays crisp in the lettuce cup.

Storage

Store the cooked turkey in an airtight container in the fridge for up to 3 days; keep the slaw separate in a sealed bowl to retain crunch. Lettuce leaves are best used fresh, but can be wrapped in damp paper and refrigerated for 1 day. Reheat turkey gently in a skillet or microwave; assemble cups just before eating.
