Vegetable & Black Bean Burrito Bowl

A colourful burrito bowl with black beans, sweetcorn, peppers and brown rice — a balanced, family-friendly meal.

Ingredients

  • 200g cooked brown rice
  • 200g canned black beans (drained and rinsed)
  • 80g frozen sweetcorn
  • 1 red bell pepper (diced)
  • 1 ripe avocado (sliced)
  • 100g cherry tomatoes (quartered)
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • Juice of 1 lime
  • Fresh coriander for garnishing
  • Salt to taste

Method

  1. Heat the olive oil in a pan over medium heat. Add the bell pepper and sweetcorn and cook for 3 minutes.
  2. Add the black beans, cumin and paprika. Stir and cook for another 3-4 minutes until heated through.
  3. Divide the brown rice between two bowls.
  4. Top with the bean and vegetable mixture, cherry tomatoes and avocado slices.
  5. Squeeze lime juice over each bowl, garnish with fresh coriander and serve.
