Cucumber, Mint & Yoghurt Dip with Wholemeal Pitta

Ingredients

  • 200g natural Greek yoghurt
  • 1/2 cucumber (deseeded and finely diced)
  • Small handful of fresh mint (chopped)
  • 1 tbsp lemon juice
  • 1/4 tsp ground cumin
  • Pinch of salt
  • 2 wholemeal pitta breads (cut into strips)
  • Carrot and cucumber sticks for dipping

Method

  1. In a bowl, combine the yoghurt, diced cucumber, chopped mint, lemon juice and cumin.
  2. Season with a pinch of salt and stir well.
  3. Toast the pitta breads lightly and cut into strips.
  4. Serve the dip with pitta strips and vegetable sticks.
