Nutritionist’s Note

I often recommend this dish to clients who need steady blood-sugar levels because the combination of fibre-rich toast and protein-dense eggs slows glucose absorption. The mushrooms add antioxidants while the modest amount of cheese gives calcium without excess saturated fat. It works well as a quick morning meal for anyone managing type 2 diabetes or looking for a nutritious, filling start.

Ingredients

  • 2 large eggs
  • 15 ml low-fat milk
  • 5 ml olive oil
  • 50 g button mushrooms, sliced
  • 30 g red bell pepper, diced
  • 30 g green bell pepper, diced
  • 15 g reduced-fat cheddar, grated
  • 80 g wholegrain bread (2 slices)
  • 1 g sea salt (¼ tsp)
  • 1 g freshly ground black pepper (¼ tsp)
  • 5 g fresh chives, chopped
  • 5 g ground flaxseed (optional)

Method

  1. Whisk the eggs with the milk, salt and pepper in a bowl until the mixture is uniform and slightly frothy, which helps create a light texture.
  2. Heat the olive oil in a non-stick skillet over medium heat, then add the sliced mushrooms and diced peppers; sauté for 3-4 minutes until softened and any liquid has evaporated, concentrating flavour.
  3. Pour the egg mixture over the vegetables, tilting the pan to spread evenly; cook for 2 minutes without stirring so the base sets, then sprinkle the grated cheddar and chives on top.
  4. Using a spatula, gently fold one half of the omelette over the other and continue cooking for another minute until the cheese melts and the centre is just set but still moist.
  5. While the omelette finishes, toast the wholegrain bread slices in a toaster or under a grill until golden and crisp, preserving the fibre structure for slower carbohydrate release.
  6. Serve the folded omelette alongside the toast, optionally drizzling a tiny drizzle of extra-virgin olive oil over the toast for added healthy fat.

Storage

Cool the omelette and toast to room temperature within two hours, then store in an airtight container in the fridge for up to 24 hours. Reheat the omelette gently in a non-stick pan and toast briefly in a toaster to regain crispness.

Tips

  • For extra protein, stir a tablespoon of hemp seeds into the egg mixture before cooking.
  • If you prefer a fluffier omelette, add a pinch of baking powder to the eggs; it creates tiny air pockets during cooking.
  • Swap the cheddar for a low-fat feta for a tangier flavour while keeping the fat content modest.
