One-Pot Mediterranean Vegetable & Lentil Stew

A one-pot stew of green lentils, tomatoes and Mediterranean vegetables — high in fibre and plant protein.

Ingredients

  • 150g green lentils (rinsed)
  • 400g canned chopped tomatoes
  • 1 onion (diced)
  • 2 garlic cloves (minced)
  • 1 courgette (diced)
  • 1 red bell pepper (diced)
  • 100g baby spinach
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 600ml vegetable stock
  • Salt and pepper to taste
  • Crusty wholemeal bread for serving

Method

  1. Heat the olive oil in a large saucepan over medium heat. Add the onion and cook for 3 minutes.
  2. Add the garlic, bell pepper and courgette. Cook for another 3 minutes.
  3. Stir in the paprika and oregano, then add the lentils, chopped tomatoes and vegetable stock.
  4. Bring to a boil, then reduce the heat and simmer for 25 minutes until the lentils are tender.
  5. Stir in the spinach until wilted. Season with salt and pepper.
  6. Serve in bowls with crusty wholemeal bread.
