Nutritionist’s Note

Managing PCOS effectively relies heavily on supporting insulin sensitivity, which makes starting the day with a low-glycaemic, protein-rich meal crucial. The blend of eggs, feta, and pumpkin seeds provides over 23 grams of complete protein per portion, helping to blunt post-meal blood glucose spikes and prevent late-morning energy crashes. I frequently prescribe recipes like this to clients looking for practical, hormone-balancing options that require minimal time in the kitchen.

Ingredients

  • 2 high-fibre seeded wholemeal tortillas
  • 4 large free-range eggs
  • 2 tbsp semi-skimmed milk
  • 100g fresh baby spinach, washed
  • 50g reduced-fat feta cheese, crumbled
  • 80g cherry tomatoes, halved
  • 1/2 medium ripe avocado, sliced
  • 1 tsp extra virgin olive oil
  • 1 tbsp pumpkin seeds
  • 1/4 tsp dried oregano
  • 1/8 tsp sea salt
  • 1/8 tsp freshly cracked black pepper

Method

  1. Heat 1/2 teaspoon of olive oil in a non-stick frying pan over a medium heat, then add the halved cherry tomatoes and cook for 2 minutes until gently softened.
  2. Add the fresh baby spinach to the pan and stir gently for 1 to 2 minutes until completely wilted, then transfer the spinach and tomatoes to a plate and set aside.
  3. Crack the eggs into a small bowl, add the semi-skimmed milk, sea salt, and black pepper, then whisk thoroughly with a fork until smooth.
  4. Wipe the pan clean with a piece of kitchen paper, add the remaining 1/2 teaspoon of olive oil, and place the pan over a low heat.
  5. Pour in the beaten egg mixture and let it sit undisturbed for 20 seconds until the edges just begin to set.
  6. Using a heatproof silicone spatula, gently draw the eggs from the outer edges towards the centre, forming soft, creamy curds without letting them dry out.
  7. Warm the high-fibre seeded tortillas in a dry pan or microwave for 10 seconds to soften them, ensuring they fold easily without cracking.
  8. Divide the wilted spinach, tomatoes, creamy scrambled eggs, and sliced avocado evenly across the middle third of each warm tortilla.
  9. Top each portion with crumbled feta, pumpkin seeds, and a sprinkle of dried oregano.
  10. Fold the bottom edge of each tortilla tightly over the filling, tuck in the left and right sides, then roll firmly into a neat, compact wrap.

Storage

The warm filling components are best prepared fresh. Leftover cooked spinach and scrambled eggs can be refrigerated in an airtight container for up to 24 hours and reheated gently, though assembly should happen just before serving.

Tips

  • Warming high-fibre tortillas briefly makes them significantly more pliable, preventing tears during rolling.
  • Toast the pumpkin seeds in a dry pan for 2 minutes before adding to enhance their nutty flavour and crunch.
  • Swap feta for reduced-fat halloumi or goat cheese if preferred, ensuring protein content remains high.
