Sardine and Avocado Toast with Omega-3 Boost

Ingredients
- 2 slices wholegrain bread (about 80g each)
- 1 tin sardines in olive oil (120g), drained
- 1 ripe avocado (about 150g flesh)
- 1 tbsp lemon juice
- 1 tsp extra-virgin olive oil
- Pinch of sea salt
- Pinch of black pepper
- Pinch of chilli flakes (optional)
- 1 tbsp chopped fresh chives
Method
- Toast the wholegrain bread until golden and crisp.
- In a small bowl, mash the avocado with lemon juice, olive oil, salt and pepper until mostly smooth with some texture remaining.
- Spread the avocado mixture generously over each slice of toast.
- Arrange the sardines on top, breaking them gently into chunks rather than leaving them whole.
- Finish with chilli flakes if using and a scatter of fresh chives.
- Serve immediately while the toast is still warm — the contrast of warm bread and cool avocado is the best part.
