Sardine and Avocado Toast with Omega-3 Boost

Ingredients

  • 2 slices wholegrain bread (about 80g each)
  • 1 tin sardines in olive oil (120g), drained
  • 1 ripe avocado (about 150g flesh)
  • 1 tbsp lemon juice
  • 1 tsp extra-virgin olive oil
  • Pinch of sea salt
  • Pinch of black pepper
  • Pinch of chilli flakes (optional)
  • 1 tbsp chopped fresh chives

Method

  1. Toast the wholegrain bread until golden and crisp.
  2. In a small bowl, mash the avocado with lemon juice, olive oil, salt and pepper until mostly smooth with some texture remaining.
  3. Spread the avocado mixture generously over each slice of toast.
  4. Arrange the sardines on top, breaking them gently into chunks rather than leaving them whole.
  5. Finish with chilli flakes if using and a scatter of fresh chives.
  6. Serve immediately while the toast is still warm — the contrast of warm bread and cool avocado is the best part.
