I love this salad because it pairs low-glycaemic chickpeas with fibre-rich pomegranate and anti-oxidant spices, stabilising insulin spikes that many with PCOS struggle with. The fresh herbs add phytonutrients and the modest olive-oil drizzle supplies heart-healthy fats without excess calories. I recommend it on busy days when a quick, balanced meal is needed to curb cravings and support hormonal balance.
Ingredients
- 400 g canned chickpeas, drained and rinsed
- 1 small red onion, finely diced (≈80 g)
- 1 medium cucumber, deseeded & diced (≈150 g)
- 2 medium tomatoes, diced (≈150 g)
- 30 g fresh coriander leaves, chopped
- 15 g fresh mint leaves, chopped
- 80 g pomegranate seeds
- 2 tbsp tamarind paste
- 1 tbsp dark jaggery, grated (or 1 tbsp maple syrup)
- 1 tsp roasted cumin powder
- 1 tsp chaat masala
- ½ tsp kala namak (black salt)
- 1 tbsp extra-virgin olive oil
- 1 tbsp freshly squeezed lemon juice
- Optional: 1 tbsp hemp seeds for extra protein
Method
- Combine the drained chickpeas, diced red onion, cucumber and tomato in a large mixing bowl; the raw vegetables provide crunch and low-calorie volume.
- In a small saucepan gently warm the tamarind paste with jaggery and 30 ml water for 2 minutes, stirring until the jaggery dissolves to create a glossy glaze that balances sweet and sour.
- Pour the tamarind glaze over the chickpea mixture, then add olive oil, lemon juice, roasted cumin, chaat masala and kala namak; toss gently to coat each bite evenly and to awaken the spices.
- Fold in the chopped coriander, mint and pomegranate seeds, reserving a sprinkle of seeds for garnish; the herbs lend fresh aroma while pomegranate adds antioxidants and fibre.
- Taste and adjust seasoning with a pinch more black salt or lemon juice if needed, then transfer the salad to a serving platter.
- Serve immediately, garnished with the remaining pomegranate seeds and, if using, a drizzle of hemp seeds for an extra protein boost.
Tips
- For extra protein, stir in a tablespoon of hemp or pumpkin seeds just before serving.
- If you prefer a less tangy profile, reduce the tamarind paste to 1 tbsp and increase lemon juice to 2 tbsp.
- The salad keeps well chilled; add the fresh herbs just before eating to retain their colour and flavour.
Storage
Store the salad in an airtight container in the fridge for up to 3 days; keep the tamarind glaze separate if preparing ahead, then combine before serving. It reheats poorly – enjoy cold or at room temperature.
