Bone Broth Chicken and Vegetable Soup for Gut Repair

Ingredients
- 1 kg chicken backs and carcasses
- 2 L cold water
- 2 tbsp apple cider vinegar
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 large leek, sliced
- 150 g kale, chopped
- 100 g button mushrooms, sliced
- 1 medium onion, diced
- 2 garlic cloves, minced
- 1 tsp sea salt
- ½ tsp black pepper
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tbsp fresh parsley, chopped (optional)
Method
- Combine chicken backs, water and apple cider vinegar in a large pot and bring to a gentle boil, then reduce to a simmer for 2 hours, skimming foam.
- Remove the chicken, strain the broth and set aside; return the broth to the pot.
- Add carrots, celery, leek, onion and garlic to the broth and simmer for 15 minutes until softened.
- Stir in kale, mushrooms, thyme and oregano, cooking for another 5 minutes.
- Shred any remaining chicken meat and add to the soup, seasoning with sea salt and black pepper to taste.
- Simmer the soup for a final 5 minutes to meld flavours.
- Optional: garnish with fresh parsley before serving.
- Serve hot, pairing with a slice of wholegrain bread if desired.
