Ingredients
- 200 g salmon fillet
- 1 tbsp extra-virgin olive oil
- ½ tsp sea salt
- ¼ tsp freshly ground black pepper
- 150 g jasmine rice
- 300 ml water
- 1 medium avocado (≈150 g), sliced
- 75 g cucumber, diced
- 80 g shelled edamame (canned, drained)
- 1 tbsp toasted sesame seeds
- 1 tbsp low-sodium soy sauce
- 1 tsp rice vinegar
- ½ tsp honey
- 1 tsp freshly grated ginger
- 1 spring-onion stalk, thinly sliced
Method
- Rinse the jasmine rice under cold water until the water runs clear, then combine with 300 ml water in a saucepan, bring to a boil, cover and simmer on low for 12-15 minutes until fluffy; remove from heat and let sit covered for 5 minutes to finish steaming.
- While the rice cooks, pat the salmon dry, brush with olive oil and season with sea salt and black pepper; pre-heat a grill pan over medium-high heat and grill the fillet 4-5 minutes per side until the flesh flakes easily but remains moist.
- In a small bowl whisk together soy sauce, rice vinegar, honey and grated ginger to create a quick sesame-ginger dressing; set aside to allow the flavours to meld.
- Toast the sesame seeds in a dry skillet over low heat for 1-2 minutes, stirring constantly until golden and fragrant; remove from heat to prevent burning.
- Assemble the bowls by dividing the cooked rice between two containers, top with grilled salmon, sliced avocado, cucumber, edamame and spring-onion; drizzle the dressing evenly over each bowl.
- Finish with a sprinkle of toasted sesame seeds and a final pinch of sea salt if desired, then serve immediately while warm.
Tips
- For extra protein, stir in a tablespoon of hemp seeds just before serving.
- If you prefer a smoky flavour, add a dash of smoked paprika to the salmon seasoning before grilling.
- Use brown basmati rice instead of jasmine for added fibre without altering the overall texture much.
Storage
Store any leftovers in an airtight container in the fridge for up to 2 days; keep the dressing separate to avoid soggy rice, and reheat the salmon and rice gently in the microwave covered with a damp paper towel.
