Date & Walnut Energy Bites

Naturally sweet energy bites made with dates, walnuts and oats — a whole-food alternative to processed snack bars.

Ingredients

  • 150g Medjool dates (pitted)
  • 80g walnuts
  • 30g rolled oats
  • 1 tbsp cocoa powder
  • 1 tbsp desiccated coconut (plus extra for rolling)
  • 1 tsp vanilla extract
  • Pinch of sea salt

Method

  1. Place the dates, walnuts, oats, cocoa powder, coconut, vanilla and salt in a food processor.
  2. Pulse until the mixture comes together into a sticky dough. If too dry, add a teaspoon of water.
  3. Roll the mixture into 12 small balls using your hands.
  4. Roll each ball in desiccated coconut to coat.
  5. Refrigerate for at least 30 minutes before serving. Store in the fridge for up to a week.
