Date & Walnut Energy Bites
Naturally sweet energy bites made with dates, walnuts and oats — a whole-food alternative to processed snack bars.
Ingredients
- 150g Medjool dates (pitted)
- 80g walnuts
- 30g rolled oats
- 1 tbsp cocoa powder
- 1 tbsp desiccated coconut (plus extra for rolling)
- 1 tsp vanilla extract
- Pinch of sea salt
Method
- Place the dates, walnuts, oats, cocoa powder, coconut, vanilla and salt in a food processor.
- Pulse until the mixture comes together into a sticky dough. If too dry, add a teaspoon of water.
- Roll the mixture into 12 small balls using your hands.
- Roll each ball in desiccated coconut to coat.
- Refrigerate for at least 30 minutes before serving. Store in the fridge for up to a week.
