Nutritionist’s Note
In my practice, supporting clients with PCOS starts with balancing blood sugar to prevent insulin spikes that trigger excessive androgen production. Plain Greek yogurt provides a protein-dense base that slows down digestion, while toasted walnuts and ground flaxseeds deliver essential anti-inflammatory omega-3 fatty acids. Adding Ceylon cinnamon enhances natural sweetness while aiding peripheral insulin sensitivity.
Ingredients
- 200g plain 0% or 2% Greek yogurt
- 20g walnut halves, roughly chopped
- 1 tsp ground Ceylon cinnamon
- 1 tbsp (10g) freshly ground milled flaxseeds
- 1 tbsp (10g) chia seeds
- 50g fresh blueberries
- 30g fresh raspberries
- 1 tsp raw unrefined honey (optional)
- 1/2 tsp pure vanilla extract
- 1 tbsp (10g) raw pumpkin seeds
- 1 pinch sea salt
Method
- Heat a small dry frying pan over medium heat and add the chopped walnut halves along with the pumpkin seeds. Toast gently for 2 to 3 minutes until lightly golden and fragrant, taking care not to burn them.
- Remove the toasted nuts and seeds from the heat immediately and transfer them onto a small plate to cool down completely.
- In a medium serving bowl, combine the plain Greek yogurt, vanilla extract, ground Ceylon cinnamon, and a tiny pinch of sea salt. Stir thoroughly using a spoon until the yogurt is smooth and the cinnamon is evenly incorporated.
- Fold in the milled flaxseeds and chia seeds, allowing them to begin absorbing moisture from the yogurt mixture for improved texture.
- Gently wash the fresh blueberries and raspberries in cold water, then pat them thoroughly dry with a sheet of kitchen paper.
- Arrange the washed berries neatly across one half of the spiced Greek yogurt base.
- Scatter the cooled toasted walnuts and pumpkin seeds over the remaining side of the yogurt bowl to preserve their maximum crunch.
- Drizzle with raw unrefined honey if using, and finish with an extra light dusting of Ceylon cinnamon before serving immediately.

Storage
Best enjoyed fresh to retain the full crunch of the toasted nuts. However, you can mix the Greek yogurt, cinnamon, and seeds in a container up to 2 days in advance; top with fresh berries and toasted nuts just before serving.
Tips
- Choose Ceylon cinnamon over Cassia cinnamon for daily use, as Ceylon contains significantly lower levels of coumarin, making it safer for liver health.
- Pre-toast a larger batch of walnuts and pumpkin seeds and store them in a glass jar to assemble this snack in under two minutes.
- Always opt for milled flaxseeds rather than whole seeds, as ground seeds release their beneficial lignans and omega-3 fats far more effectively during digestion.
